I don’t actually eat a great deal of chocolate.


However, after watching the movie “Chocolat” I thought how magic it would be to be able to make “proper” chocolates.


After surfing the web I found Rumseys, who have a cafe and shop in Wendover, but also run chocolatiere courses in Stone.  There are many places where you can do an hour and a half “chocolate fun” sessions, however I wanted to know more about the history, science and technology behind chocolate making, hence choosing Rumsey’s.


Initially I thought the fee of £150 for a day was a little steep - however it was excellent value for money . There was only myself and one other lady, so we had the undivided attention of the chief chocolatier Pawel Symanski, and we were able to take as many chocolates home that we’d made as we wanted to, which was probably around £50 worth.


We learned the art of chocolate tempering, made a good selection of different types of chocolate fillings, and also used a chocolate mould to make a figure of our choice. I chose the (clown) accordionist.....
